雞全腿2 支

醃料

醬油2 大匙

1 大匙醬油 ≈ 18 g

米酒1 大匙

花椒1 大匙

1 大匙乾花椒約 5 g

1 茶匙

1 茶匙鹽 ≈ 6 g

月桂葉(可選)1 片
辣椒粉(可選)適量

Method

    將雞全腿切分成棒棒腿(小腿)、雞腿排(大腿),並從背面用叉子戳穿多次,以利醃製

    雞腿放入碗中加醬油、米酒、辣椒粉(可選)、月桂葉(可選)醃製

    熱鍋,中火將鹽、花椒炒至微微變黃出香

    炒好的花椒鹽倒入碗中與雞腿拌勻一起醃製 30 分鐘

    蒸煮 30-40 分鐘 至雞腿熟透(筷子能輕鬆戳穿)即可享用

Notes

料理步驟少,備料容易,缺點是比較耗時,可以前一晚先用醬油、米酒醃製。 直接買棒棒腿、雞腿排、雞翅也都可以。醃製要先用叉子戳穿或劃刀才會入味。
