蛋茄1顆
味增1 大匙
味霖or米酒or花雕酒1小匙
砂糖0.5小匙

    茄子洗淨擦乾,去掉蒂頭,表面塗上一層橄欖油(食用油都可以),用錫箔紙完整包裹起來(霧面朝外)

    放進氣炸鍋180°C烤10分鐘,打開錫箔紙,茄子對半切開,中間大約7-8成軟即可,趁熱在切面上再塗一點油(我這邊用的是奶油,可以增加香氣)

    味增、砂糖、酒or味霖混合均勻,塗在茄子切面上

    塗味增的那面朝上放進氣炸鍋,錫箔紙敞開,200°C再烤7-10分鐘,直到味增微焦即可(每3分鐘確認一下進度,小心不要烤焦了)

Notes

沒有氣炸鍋也可以用烤箱替代,可參考上面的溫度和時間,基本上先把茄子烤得7-8分熟,再提高溫度把味增烤一點點焦就行
